Mexican Pork Stew

1 yellow onion
2lb pork sirloin roast
2 cans diced tomatoes
1/4 cup taco seasoning
additional water
2 cans black beans (drained)
10oz frozen corn
4.5 cups prepared brown rice

Slice onion and put in a layer at bottom of  round crockpot.  Place roast on top of onion.  Stir taco seasoning into tomatoes and then pour over pork roast.  Add additional  water sufficient to cover roast if necessary.  Cook on low for 10 hours.  For final hour, shred pork and add corn and beans.

Serve over rice or stir rice into stew.

Optional garnish with cheddar cheese, sour cream, cilantro, etc.

Winner.  Will definitely make again!
